From Brazil and Poland to Ukraine and the Philippines, we selected a few of our colleagues from the Global Hotel Alliance (our fellow Discoverers!) and asked them to share their favourite dishes from their home country.

Best Pig Ever: Lechon From The Philippines

My all-time favourite dish, and a must-try for any traveller visiting my home country, has to be lechon—roast pig! Lechon is undoubtedly the star of any party in the Philippines. Other nations are known for their own versions of roast pig but we Filipinos have managed to elevate the standard so high that in 2009, no less than the late award-winning chef and food explorer Anthony Bourdain proclaimed our lechon as the “best pig ever.” The whole pig is spit-roasted slowly over charcoal for hours. Its skin is crisp like candy, caramelized to a perfect orange brown sheen, and the flavorful meat is super tender and juicy! If this doesn't convince you to try it, I will leave it to your imagination until you drool.

Sweet And Savoury Ukranian Varenyky Dumplings

Let me introduce you to varenyky, my favourite traditional delicacy from my homeland of Ukraine. These tasty dumplings are filled with a variety of ingredients such as vegetables, meat, cheese, sauerkraut, eggs, mushrooms, and fruits. My favourite version? The one that’s filled with berries and cottage cheese! The saccharine, fruit-filled variety is typically served with sugar and sour cream. The varenyky dumplings are so popular among us Ukranians that we even have a monument celebrating it in the city of Cherkasy. Perhaps, there is no other such delicacy in Ukraine, which is so loved so dearly!

Haleem, From Hyderabad With Love

If you’re visiting India, I highly recommend that you try haleem—a paste-like stew made up of meat (you can choose whether chicken, beef or mutton), pounded wheat, lentils, ghee, ginger-garlic paste, and turmeric. If you happen to explore Hyderabad (where I’m from!), make sure to drop by at Pista House, a popular local restaurant where you can savour the most delicious bowl of this indulgent delicacy. Pista House's haleem has become the first non-vegetarian recipe in India to be accorded the Geographical Indication status by the Government of India, which means no other city/state can make or market haleem as Hyderabadi haleem. That makes their recipe of the dish even more special!

Craving Meat? Savour Some Rodízio From Brazil

If you’re visiting my home country of Brazil, I highly recommend that you experience a rodízio—a type of an all-you-can-eat style restaurant where servers come to the table with skewers on which are speared various kinds of deliciously grilled cuts of meat, like beef, pork, chicken and sometimes even exotic meats. For a truly unique experience, rodízio courses usually are served right off the cooking spit and are sliced or plated right at the table. The meat goes perfectly well with crispy polenta fries, pao de queijo, rice, black beans and salad. Yummy!

Arouse Your Appetites With Mizeria From Poland

Polish cuisine is generally rich in meat, especially pork and chicken, but as I am vegetarian, I will tell you about one of my favourite dishes for my type of diet, which is called mizeria. Mizeria was always prepared in my family home as an addition to the fried egg and mashed potatoes. I love this set! First, you slice and salt some cucumbers to draw out the water. Then chop up some dill, add sugar and sweet-sour cream (or more healthy plain yoghurt) and vinegar. Mix it all together to become sour and sweet, amazing taste! The dish is usually served alongside a main course and is one of the most popular salads in Poland.

For the cocktail connoisseur, Hotel Lungarno’s Picteau Cocktail Bar​ offers the ultimate drink—‘The View on Arno’. This signature cocktail is fresh and sweet thanks to the main cucumber and mint flavours. The floral touches are given by Bulgarian rose-flavoured Hendrick’s gin and by St. Germain, an elderflower liqueur with very sweet notes. The freshness is provided by cucumber and mint along with Green Chartreuse, a French herbal liquor.

Here are the ingredients:

  • Hendrick’s gin, 40 ml
  • St. Germain Elderflower liquor, 35ml
  • Green Chartreuse, 5 drops
  • Lime juice, 15ml

  • Cucumber, 4 slices
